Fried Green Tomato BLT's

  • Fry 6 slices thick-sliced smoked bacon. Cut four slices of whole wheat or whole grain bread with a good crust. Wash and drain Boston Leaf lettuce.
  • Prepare Wasabi mayonnaise by adding 2 tsp. prepared Wasabi Horseradish with ½ cup mayonnaise
  • Prepare Fried Green Tomatoes
  • 1 large firm green Tomato cut into ¼" even slices.
  • Soak in buttermilk for one hour. Remove and salt tomatoes individually.
  • Toss in mixture of 1 cup all-purpose flour and 2 tablespoons corn meal or tempura flour.
  • Fry tomatoes in 2 inches of canola oil at 375 degrees
  • Drain tomatoes on paper towels.
  • To Assemble Sandwiches
  • Spread a small amount of Wasabi Mayonnaise onto thick slices of crusty whole grain bread.
  • Place Boston Leaf lettuce on top of mayonnaise and add two slices of Fried Green Tomatoes. Top with three slices of Fried Bacon and top with second piece of bread,
