Handmade Crackers

1/2 Patty's Basic Bread Recipe (double rising)

Rolling Pin

Flour to keep dough from sticking to surface and rolling pin

On a clean, dry surface divide dough into 8 - 12 pieces. Flour surface and roll out each piece of dough into very thin, long rectangles and cut with a pizza cutter or knife.

Create lengths 6 - 8 inches depending on baking sheets. Sprinkle each cracker with 1-2 tbsp. of seasoning mixture and continue to roll seasoning into both sides of cracker.

Carefully place crackers on ungreased baking sheet, being careful to not let crackers touch. Bake at 425 degrees for 6 - 9 minutes until topping is golden. Remove to a drying or cookie rack.

Once cooled on rack remove to a dry location for several hours before packing into airtight containers.

 

Topping Mixture:

1 cup Parmesan Cheese or other aged cheese (grated)

12 Wheat Thins

1 tsp cayenne pepper

1 tbsp dried chives

2 tbsp spice blend (cumin, turmeric, paprika, garlic and onion powder)

2 tbsp black and white sesame seeds
