Cranberry-Pear Conserve

Cranberry-Pear Conserve1 bag fresh cranberries
2 pears-peeled, cored and cut into 1 inch pieces
½ cup sugar
3 tbsp orange juice
2 tbsp raspberry syrup plus 1 tbsp for floating
3 tbsp sugar-free Tang (powder)
3 tbsp honey
1 tsp vanilla
pinch of salt
1 tbsp lightly salted, toasted chopped pecans or walnuts

Place ingredients in a heavy-bottomed saucepan and gently bring to a boil. Reduce heat and allow mixture to simmer on stovetop for twenty or thirty minutes. Remove from heat and cool mixture.

Once cranberry/pear mixture is cooled, gently pulse mixture in a food processor bowl or with a hand-held immersion blender. Add toasted nuts and stir well. Spoon mixture into a glass jar fitted with a tight top. Before sealing float remaining tablespoon of syrup on top. Place in refrigerator for several days before serving with Brie or other soft cheese.
