Gorgonzola Cream Sauce
2 tbsp unsalted butter
2 tbsp extra virgin olive oil
½ cup cream
½ cup chicken stock
1 cup crumbled gorgonzola cheese
2 tbsp chopped basil
Fresh-cracked pepper to taste
1 tsp fresh-squeezed lemon juice
3 tbsp julienned Seranno ham or 1 tsp fried pancetta (finely diced)
Gently melt butter with olive oil. Add ½ cup cream and gorgonzola cheese. Whisk ingredients until smooth. Add chicken stock and remainder of ingredients. Reduce ingredients by ¼ volume and add to your favorite pasta.
