Limoncello
15-18 large lemons (washed, rinsed and dried)
- Shave rinds from lemons into large glass jar. Cover rinds with a quart of golden grain alcohol. Place in a cool, dark place for ten days. (Remove any white pith from rind as this will result in a bitter tasting drink.)
- After the initial ten days, create a simple syrup by dissolving 6 cups of sugar into 5 cups of water over a medium-high heat.
- Mix cooled simple syrup with rinds and alcohol and return to a cool, dry location for thirty days.
- After thirty days add one fifth of vodka and stir. Return jar to a cool, dark location for another thirty days.
- Finally, pour Limoncello through a cheesecloth-lined strainer several times to separate rinds and residue from alcohol. Once you are satisfied with the clarity divide liquer into smaller airtight containers.
Serving Suggestion:
Place Limoncello in a glass bottle with air tight lid overnight. (Liquid will not freeze due to the high alcohol content)
Serve in pretty cordial glasses with a twist as an aperitif.
