Roast Beef PaniniRoast Turkey with Mortadella

3 lb turkey breast with bone removed
1 lb mortadella
salt and pepper to taste
fresh sprigs sage, rosemary and basil
kitchen twine
olive oil

Sprinkle fresh turkey breast evenly with salt to taste Layer Mortadella slices evenly over entire turkey breast.

Truss with kitchen twine and place in preheated stove-top skillet with three or four tablespoons of olive oil.

Sear on all sides until golden brown. Add sprigs of whole sage, rosemary and basil to oil and continue browning for ten minutes. (Medium heat)

Remove to hot oven (375 degrees) and bake for additional 15 – 20 Minutes.

Remove from oven and allow turkey breast to rest. Remove twine and discard. To serve slice turkey into 1 ½ inch pieces. Arrange spiral slices on white platter and garnish with fresh herbs. Whisk juices from pan with¼ cup chicken stock, reduce and serve with turkey slices.
