Shrimp Pie
1 ½ lbs lightly steamed medium shrimp-chopped into bite-sized pieces
2 - 3 cups of shredded mixed cheese mixed with 1 tbsp flour
1 cup half and half
1/8 cup white wine
2 eggs beaten + 1 egg beaten for glaze
2 tbsp chopped green onion
1 tsp lemon zest
1 tsp fresh-squeezed lemon juice
Salt and pepper to taste
1 package rolled pie pastry (2 sheets)
Mix wet ingredients. Pour over cheese and flour and stir well. Add well-drained steamed shrimp pieces to wet mixture along with salt, pepper and lemon zest.
Pour mixture into a pastry-lined deep dish pie pan and cover with additional sheet of pastry. Crimp edges. Cut steam holes in top pastry and brush beaten egg yolk over top of Shrimp Pie.
Preheat oven to 375 degrees. Place Shrimp Pie on baking sheet. Bake for thirty to forty minutes until golden on top. Allow to rest ten minutes before slicing.
