Twice-Cooked Potatoes
4 - 6 medium Golden Yukon potatoes
¾ cup low-fat sour cream
½ stick unsalted butter (melted)
1 tsp each salt and pepper
½ cup 6-Italian Cheese mixture
1 clove of garlic and 1 tbsp of olive oil for coating baking dish
3 tbsp homemade bread crumbs
Peel and halve potatoes. Cover with cold water and bring to a boil. Boil until potatoes are soft but not mushy.
Remove potatoes from water and cool. Mince or rice cooled potatoes into a mixing bowl. Add remaining ingredients and mix well.
Rub a baking dish with a clove of crushed garlic and lightly coat with olive oil. Top with homemade bread crumbs and bake in 450 degree preheated oven for 20 minutes.
