yellow pear tomato pizza sauce

1 pint yellow pear tomatoes (coarse chop)

2-3 tbsp garlic olive oil

1 tbsp mixed dried herbs (oregano, basil, sage and fennel seed)

2 coarsely chopped green onions

1 tsp chopped parsley

1 clove finely minced garlic

1 tsp coarse salt

Dash of balsamic vinegar

1 tbsp fresh chopped basil

1/2 tsp anchovy paste or mashed fillets

Red pepper to taste

Heat olive oil for several minutes before adding tomatoes and dried herbs.  Cook tomatoes on medium heat.  Add remainder of the ingredients except the chopped basil. Simmer sauce for ten minutes or until tomatoes cook through.   Adjust seasonings and add fresh chopped basil.

This is an easy pizza sauce created out of an abundance of yellow pear tomatoes this past growing season.  The sauce cooks quickly and has a nice sweet taste without the addition of sugar.   Works well in any pizza recipe calling for a red sauce.
